Afaik the only way of doing similar i know of would be to play the game in a VM running in a window, so the VM can be left open in the background which will let the game run on. Basically, a second computer.

Connect to any Server in VC:MP, write /setconfig game_windowed 1 and press enter. Then goto VC installation folder and run VC. Once ran, goto Options > Display and set resolution to 1280x940. When wanna minimize press ALT + TAB. Hope this helps, it works for me.
